Can an orginal trustee revoke an irrevocable trust agreement?

I am about to create a Living Trust, which will contain substantial assets. I am not married, but have been with a significant other, who is my fiance. We do not have any marriage plans at present. She also has substantial assets which have recently been inherited as the beneficiary of a family trust. What is the best method for us to create a joint trust, without being married, that will give us the best protection from the estate tax laws.
